Heath Returned from Camp Pull A Shot

I arrived at camp pull a shot in Santa Barbara on a Friday. I registered and got settled while I awaited my first and favorite class, customer service. The class was held in a large tent with about fifteen other baristas who were all very eager to hear of one another experiences at their shops, good and bad. The class wrapped up after around two hours and we met for a delicious hamburger lunch. The lunch was then followed by a seed to cup lecture from Cafe Imports; Here I learned variety, processes, green shipping, and everything in between. With my superior coffee slingers knowledge, right after the lecture I went and tested for my BGA level 1 Barista certification. The test consisted of three pages of various questions, some of which were practical knowledge, brewing theory as well as a hands on practical test that tested work flow, beverage knowledge and skill. After I sweated out the test I met a alot of other Baristas collecting outside near the camp fire and kegs. The kegs had a espresso machine tap, they had an actual La Marzocco G3 modified to pull shots of beer! later that night we had dinner and I returned to my cabin.
Day 2- I got up at eight caught my first class at 9 which happened to be Grind Dose Tamp Extract, an entire class on understanding espresso and everything required to pull great shots, here I got to use a Simmonelli espresso machine and a handful of grinders. I also got some one on one time with Lorenzo Perkins and picked his brain about competing and his thoughts on current espresso trends. I left there with a more solid understanding of what happens to a shot from the first ground to the cup. I grabbed lunch and ran to catch a lecture on brewing theory by Nick Chao which was awesome but so much chemistry to take in my brain is still recovering. All in all this camp was very much a success! This is a short summary of my adventure where I learned a lot and made friends in the industry that I never would have met otherwise.

Slingers Roasters is getting ready for some big changes as we grow into Coffee Slingers Roasters. This will be exciting and fabulous for all of us. We are getting ready by making a few changes. Our fine friends we call loyal customers will be experiencing some of these changes.Why the changes? First it will help us focus on what we do best, COFFEE. This will help the crew provide efficient quality service and genuine hospitality to the customer. Secondly, change comes with rising costs, quality improvements and advancing production structure. Together these changes will enhance the overall coffee experience. Consistency in taste and quality is our focus as we aim to show case the Terroir of the coffee we roast, not mask it. We want to delight you.

What to expect On October 24th

 Milk based beverages will be going up .25-.50 cents due to our organic milk supplier.  Bottled Beverages will be going up .25 cents  We will be featuring one single origin as a pressed coffee of the day. We will rotate this origin during the week so you can experience everything we offer.  Tea prices will be changing & each tea will be priced in accordance with their cost to us. We will be featuring a new variety of pastries from Prairie Thunder. Small Physical improvements will be made to our space as we near the opening of the roastery.

A few things that we will no longer be offering

 We will no longer offer Chai We will be cutting the Ozarka bottled water. More seating will take the place of the magazine stand although the Gazette & daily paper will still be offered. In order to ensure enough seating for all our loyal customers power outlets will no longer be available. No worries, we will still offer Wi-Fi. A few sweeteners will be cut to prevent adding additional flavors that may change or mask the flavors of our coffee (splenda , honey and vanilla syrup) we will only offer additive that complement the coffee we serve. Impromptu El Salvador

Hello Coffee Monsters,

I had a whirlwind 6 day vacation to El Salvador,hung around San Salvador rode buses got lost and found the way up "La ruta de las flores" from Sonsonate up through Juayua for a day or so then to Apeneca and Ataco,all are coffee regions in the quiet off season,it was raining and a little sleepy even.We are definitely gong to visit again during Cosecha season.Did a lot of riding buses around and familiarizing myself, practicing bad spanish.At Ahuachapan I jumped on a bus up to Tacuba By the Parque Nacional.It was really beautiful and peaceful.Really old coffee trees right in town.There are coffee trees everywhere in Western EL Salvador and toward Guatemala.

I ate pupusas for breakfast every day,they're like tortillas with beans and cheese cooked inside and eaten with pickled vegetableslaw and sauce.

Finally connected up with the one and only Andy Newbom of Barefoot Coffee fame and got to go to a little shindig for the Barista champion of the world, ya heard , Alejandro Mendez, from Viva Espresso as well as the people behind him, Federico Bolanos, Lily Pacas and the whole ViVa Espresso crew. Great people.Meeting Gloria Rodriguez of Finca San Jose was like meeting a rock star. Another generation of coffee people are coming up her Daughter Maria and her son-in-law Luis, they actually produced the La Gloria (Cup of Excellence) SO that is on press at Slingers at the moment. They also have a cafe in Santa Tecla called Cafe Caracol. Coffee Quality in the family. If you are ever in San Salvador you probably will encounter the Plaza Futura building in Colonia Escalon...Go have coffee at Viva Espresso..They are waiting for you.

Had a little to much fun,little too much beer,was late to pull shots at Viva the Next Day with Andy then got schooled anyway on the simonelli and the compaq grinder.grrrr....practice with different equipment.I think I learned to pull the first shot I could recognize as good with spouts.I learned on the Synesso with bottomless portafilters so it was totally new for me.Andy was very patient .Cheers man for sourcing great coffees direct for places like Coffee Slingers Roasters. Now I got to get back to work so I can afford my vacation.

The beans that looked processed are from the stream. I hiked this out of a 8 mile valley a 6 mile Kayak trip all the way home to set at the counter of Coffee Slingers for you to enjoy.

Delicate white jasmine aroma. The fruit taste of wild raspberry and texture of apple peel the unprocessed fruit was that of a green bean. I ate many cherries and did not get a caffeine buzz. One location where many ripe Cherries were falling in to the stream, below, the outer parchment was attached but almost like a natural washed process was happening. The wild coffee trees grow long and tall reaching for the sun in a heavy jungle canopy. Lots of the Cherries had been opened and birds had eaten only the seed of the ripe fruit. The Hanakapi'ai Vally was once a coffee plantation 1853. Goats do love coffee plants eand there are wild goats everywhere so the spread of seed from birds to goats from valley to valley, "wild coffee plants became abundant" Fabulously beautiful coffee trees with there shiny glossy leaves and their rough roots. Wild.

We where doing some paring with the new coffees Brazil Thais and Guatemala vista Hermosa at a 8am cupping blood Orange minced dates and mint. It creates excitement and help us pick out flavor characteristics in the coffee we surround our self with daily.

We love the customers that come in and here are a few super regulars that we appreciate.

Chin has started BArista training and Heath has started training the BAristas. We are evolving into grown ups and Slingers will be the big 3 years March 8th keep your eyes out for the fliers!!

Edwin Martinez is the third generation of a family of coffee producers at Finca Vista Hermosa in the Huehuetenango region of Guatemala. The Martinez family has been growing award winning coffee since 1959. The elevation of the finca is very high ranging from 1550 meters to over 1800 meters among some of the steepest, roughest mountains in Central America.

Barefoot Coffee has partnered with Finca Vista Hermosa since 2004 and they were one of Barefoot's first Direct Trade coffees before it was even a term or a program. Finca Vista Hermosa has won countless awards and is currently sold out for the life of their farm with a very long waiting list of roasters trying to buy their coffee.

We have Made a few changes at Slingers
We will be preparing for the growth and development of Slingers by keeping the focus on what we do best: “The Coffee”. If you love Coffee as much as us you will love the new growing plans.
What has changed:
• We no longer have whip cream/ whip cream goes thru a lot of processing and is a challenging to keep it fresh, available and affordable.
• We soon will not offer Sugar free vanilla. This product does not marry with or highlight the coffee we offer.
• We changed the way we make our Mocha. It’s fresher and highlights the coffee in a very luscious way.
• We will not be offering shaken beverages. We have created an efficient bar production that will speed up the delivery of beverages without sacrificing quality.
• We no longer have power available at on the south wall for you to plug in.
It has helped tremendously with the community feel. We have more people talking and less people sitting for hours plugged in. The staff can focus on coffee and not worry that customers will not have a place to sit during peak hours. The wifi has been problematic. We will offer limited power at front windows and we will offer wifi.
Wifi is not free, it is with purchase. Slingers is trying to keep the focus on the coffee and if we do not focus on the coffee we will be limiting the growth of Coffee Slingers.

Seed,silver skin,hull,muscilage (honey),pulp (fruit). Different processes develop specific parts of the berry to create different cupping notes in the finished roast.

Perfect weather on the walk in to Barefoot Coffee Works from Caltrain . san francisco to san jose in 45 min. Dropped us 2 blocks from the lovely roasters.

Overtime you can see that the details and specifics of cupping coffee becomes a craft and art of its own.

Grenades anyone? so popping the dried coffee before smelling the aroma is called a grenade. Just ask Andy. From farm to farm they seem to have their own specific cupping slang.

Get to it my Friends. I can say that the best way to get to know someone a little better is to cup with them. These guys Andy and Christan from barefoot are full of golden knowledge nuggets filled with dark chocolate ganash.

It was a day of fragrant flowers blooming in San Jose at Barefoot,a really amazing roastery in a nice beautiful residential/business space. We jumped in to a cupping with Christian and Andy and slurped to vibrant coffee and conversation. The new Costa Rica... (wow) Christian shared his adventures in Costa Rica and the details and individualities of each country growing and pulping and drying process. The work and love and just given it the respects it deserves when your roasting to its perfection. The agriculture, the blood and sweat of what happens when you source and sort at the root. Loved talking with Christian and Andy, full of knowledge fruit. Melody and Ian went BACK to School today with stainless steel spoons and coffee people everywhere. Burlap bags everywhere and the sound of a roaster loading and dropping. A crew of beautiful women making coffee dance at a pour over bar and then a crazy taco truck lunch! Life can be so damn good.

On the 3rd Saturday of the month at 3pm, the caffeinated and the curious can take part in an actual ritual : Called “cupping,” the process is similar to wine tasting; it’s the way Coffee Slinger's coffee buyers evaluate different beans, and at the shop it helps to educate consumers about the beverage. It serious stuff and its fun.The baristas present a series of beans, first whole, then ground, so participants can inhale the aromas of each. Then, hot water poured onto the grounds raises a crust of coffee on the surface of each cup for further sensory evaluation. Finally, it’s time to sample the brew and discuss its flavor and aroma.
